Salmon Veracruz

Salmon is rich in Omega-3s and full of protein which makes it a great option for a week night dinner. Once you make this meal once you'll want to add it to your weekly meal planning routine. Serve this salmon over some herbed quinoa, basmati rice, or cous cous to make it extra filling.
Ingredients
1 salmon filet (1/2 of a fish)
1 each red, yellow, and orange bell pepper, sliced into 1/4 inch strips
1 red onion, sliced into 1/4 inch strips
2 jalapenos (optional)
2 lemons, sliced in rounds
1 Tbsp. Olive oil
Salt
Pepper
Instructions
Preheat your oven to 400°F.
Prepare the fish by coating the skin and flesh side of the fish with olive oil, using your fingers to make sure it's good and coated. Sprinkle with salt and pepper to taste and place on a sheet pan.
Toss the peppers and onion in the olive oil, season with salt and pepper.
Top the fish with the pepper and onion mixture.
Arrange the lemon slices on top of the peppers and onion.
Place into preheated oven and bake for about 20 minutes or until the fish and vegetables are cooked through. The fish should be flaky.
Slice the fish into preferred portions and serve.
Don't worry if the skin sticks to the pan. You don't want to eat the skin anyways.
